It's soup weather in Bathurst! It was literally minus 4 degrees last week apparently, so I'm glad I was in Melbourne!
Whilst there... I met Elvis...
No, not the King himself, but maybe the King of Kitchen. Elvis runs the food section at the back of Locanda Cucina Bar under the Rydges Melbourne, at 186 Exhibition Streeet. He dished up a fresh spicy tomato soup that was sensational - his soup is so popular he goes through 15 litres a day! Even more impressive though was that special ingredient Elvis brings to his customers... See if you can spot what that special ingredient is as I captured some Elvis magic on video for you. Speaking of soups, I must admit I do enjoy a good home-cooked soup when it gets cold, so I asked my sister for some recipes. Being time-poor, I chose one of the quickest ones to cook and to my surprise (and the staff at work) it turned out to be a cracker!
Now I haven’t cooked a soup in years, especially this one, however with a simple step-by-step recipe (and a lot of love) it turned out pretty good first go! Keep in mind that without a recipe, I wouldn’t even know where to start; and it’s exactly the same with building financial freedom. You need to find the step-by-step systems others have used to be successful and follow them.

Lentil and Caramelised Onion Soup
On the table in 35 minutes
Serves 4 per serving 12.2g total fat (6.5g saturated fat); 2316kj (554 cal); 74.2g carbohydrate; 31.5g protein; 16.3g fibre
Ingredients 2 Cups (400g) red lentils ½ Cup (100g) brown rice 1 litre (4 cups) vegetable stock 1 litre (4 cps) water 1 tablespoon ground cumin 40g butter 3 medium brown onions (450g) sliced thinly 2 tablespoons white sugar 1 tablespoons balsamic vinegar pinch cayenne pepper 1/3 cup finely chopped fresh coriander 1/3 cup finely chopped fresh flat-leaf parsley 1 cup (250ml) vegetable stock, extra
Directions 1. Rinse lentils and rice under cold water; drain. 2. Combine stock and water in large saucepan; bring to boil. Add lentils, rice and cumin; return to boil. Reduce heat; simmer, uncovered, stirring occasionally, 15 minutes or until lentils and rice are just tender. 3. Melt butter in large frying pan, cook onion, stirring, until onion softens. Add sugar and vinegar; cook, stirring, until onion caramelises. 4. Stir pepper, coriander, parsley, caramelised onion and extra stock into lentil mixture; cook, stirring, until heated through.
